Artisan Bread Recipe Stand Mixer

All right, gosh, where to start on this great recipe and process for a good bodied, healthy rye bread. Shape it into a ball and place it in a bread cloche or dutch oven.

Proof the dough (about 1.5 hours).

In the bowl of a stand mixer, combine the yeast, water, salt, caraway, and rye flour. Then tip in the cheese and olives and continue mixing until well combined. The dough should be a little wet and sticky.

Then add 482g room temperature water for 70% hydration. Add in the milk, sugar, salt and butter solution as well as four and a half cups of flour into the bowl. Turn off mixer and allow to stand for 10 minutes.

To the bowl of your stand mixer add: Cool to lukewarm (less than 110 degrees f). Then add 144g sourdough starter that has grown to its peak.

Pour the measured lukewarm water into the bowl and mix the yeast into it, beating gently with a fork. The last step is to place the bread dough in an oiled bowl and cover with plastic wrap. With the mixer on 2 slowly add 4 ½ cups ap flour, ¼ cup whole wheat flour, and 1 teaspoon salt.

Turn off mixer, add the liquid and set to low speed again, this time for about a minute and a half, or until all ingredients have combined. Replace beater with dough hook and then add 280 mls of water and the oil. Get this recipe photo by alex lau
